CARIRI trains school feeding caterers

The National Schools Dietary Services Limited (NSDSL) provides these meals (breakfast and lunch) throughout Trinidad and Tobago.

In recognising that schoolchildren are a highly vulnerable group with respect to food-borne illness, the NSDSL contracted CARIRI to facilitate this training.

The three, five-day workshops covered both theory and hands-on training/demonstrations in CARIRI’s food laboratory.

Technical modules focused on food safety management and process control, while the management sessions dealt with financial and human resource management.

Participants learnt about food safety management practices as they relate to the preparation, handling, storage and transport of meals. Technical components included raw material selection and storage; process flows; sanitation and hygiene; process control; storage and handling of prepared foods; pest management and record keeping.

The business module focused on such items as financial record-keepings, budgeting, costing and appraisal of staff performance.

In January of this year, CARIRI, on behalf of the NSDSL conducted a half-day sensitisation programme on food safety, which was well received by these caterers.
