Coconut Rice


Here’s a delicious and healthy way to prepare rice. This is a tasty option for a vegetarian but is also a good choice for anyone who is looking for more options for cooking rice:


INGREDIENTS


1/2 cup onions, chopped


2 tbsp margarine


3 cloves garlic


A dash of cinnamon


A bay leaf


1/4 tsp turmeric


Salt


1 cup rice


2 cups water


1/3 cup coconut


Some raisins



METHOD


Saute the onions in the margarine with the herbs and spices. When they get soft and translucent add the rice, water and coconut. Bring to a boil and turn down to a simmer and cover. Cook for about 25 minutes or until rice is done, and keep peeking to a minimum. When it’s done stir in some raisins and eat.
